Lemon Basil Marinated Zucchini and Chicken
Prep time: 25 minutes
Inactive time: 1 hour
Servings: 5

INGREDIENTS
For the marinated zucchini
3/4 cup SR MCT Oil
3 large lemons, juiced
15 basil leaves
1 tsp Sea salt
3 cloves garlic, smashed
5 zucchinis, thinly sliced or spiralized into ribbons
For the salad
3 lbs shredded chicken breast
1/2 cup pistachios, shelled and chopped

METHOD
For the marinated zucchini
Add SR MCT Oil, lemon juice, basil and sea salt to a blender and blend until combined. Pour the marinade into a large bowl and add the smashed garlic. Add the zucchini ribbons and toss to coat. Cover with plastic wrap and refrigerate for 1 to 5 hours.
Once marinated, remove the garlic and discard.
For the salad
Divide the marinated zucchini into 5 containers. Top with 1 cup of shredded chicken and 1 ½ tablespoons of pistachios.
