Those two knives are beautiful, but may I suggest 2 honourable mentions. For a fixed blade the victorinox poultry boning knife is as the name suggests made for poultry and breaking down birds and is a pleasure to use with its full size handle. The second and my go-to is the outdoor edge fish and bone a folding fillet knife with pocket clip but it has the tip and belly of a boning knife but with the flexibility of a fillet knife it works extremely well.
I’ve been looking at smaller blade knives recently for birds/small game/small tasks. Thanks to your video I’ve found another new brand/model. Highly thinking about this. Have also looked at the Flyway, CR 2.5, MKC mini Speedgoat. It’s going to be between this and the mini Speedgoat.
.06 thickness AEB-L was originally designed for a razor steel for its ability to get very sharp and resharpen easily, it is compared to 1095HC but without the low corrosion, so think stainless 1095 Very good steel

You might like the Esee CR 2.5. I'd assume it's made in the US too.
